quintessential summer salad


before the summer completely ended, i wanted to have the quintessential summer salad.

what is the quintessential summer salad? is it potato salad? is it fruit salad? nope. although, i absolutely love those salads as well. in my mind, the quintessential summer salad consists of tomatoes, fresh basil and fresh mozzarella seasoned with an excellent olive oil, salt, and freshly crushed pepper.

for today's salad i used organic heirloom tomatoes....i love having multiple colors on the plate....



i quickly sliced up portions of the tomatoes as well as a few fresh basil leaves....i prefer it this way instead of the whole leaves....


then quickly assembled it with a drizzle of kalamata olive oil, a sprinkle of kosher salt and fresh crushed pepper. how fast was that!
there is something about this combo that is extremely satisfying and nourishing. it is a deliciousness that embodies fruity sweet and savory flavors...the creamy soft succulent texture of the cheese rolls on the tongue with the olive oil....and we must not forget the occasional bite of black pepper....hence, freshly crushed black pepper is a must. you know, i bet this would taste great on toast. perhaps a thought for tomorrow...
