the last of the prosciutto di parma


i've been cleaning and organizing all morning. i'm trying to get things in order before i start back into work tomorrow. i still had a couple of slices of prosciutto di parma left, so i wanted to use the last of it for my simple to put together but still rather sophisticated lunch today. again....inspired by roma....big shock...

i started out with the remaining slices of prosciutto


then added some sliced heirloom tomatoes ..


and the fresh mozzarella....

a bit of homemade chili oil......

then added some mcevoy olive oil.....

then freshly ground black pepper....


this was probably my fave prosciutto insalata thus far.... savory, spicy, succulent, and very satisfying....

truly a combination of my experiences in rome and the lovely flavors of home.
