gluttonuous glee


so i did it.

i made a foie gras banh mi with the rest of the foie gras terrine that was in the rest of my mini foie gras take home kit from hapa ramen. as i indicated yesterday, i don't know when the next time i'll acutally have foie gras terrine in my place given how labor intensive it is.....sooooooo....i took advantage of having some of richie's delicious foie at hand.

after my morning meetings, i set the ingredients out.....bread, butter, mayo, homemade pickled carrot (reasoned rice wine vinegar and buckwheat honey), homemade pickled chilies (apple cider vinegar, lemon peel, and sugar), broad bean soy sauce, and cilantro



first up was to toast a hunk of the the acme sweet baguette bread in the oven. while that was toasting...i did want to take a moment to have a bit of the terrine


with the bread...just "as is". just as it is....the terrine is super delicious.....so supple....and just melts on the tongue. i seriously thought about scrapping this whole foie banh mi experiment and just eat the rest of the foie "as is" with the bread. but i reminded myself that it is unlikely that i will have the opportunity to play with foie terrine for some time.



alas.

so when the bread was nice and toasty, i took some softened straus butter and spread it on the top.....and splashed some of the broad bean soy (if you wanna go seriously south bay style...you can use maggi sauce)....


and then spread some organic olive oil mayo on the bottom.....





and then placed the foie on top of the mayo......



then added the honey pickled carrots and sprinkled chopped pickled chilies (not a lot of either one because i didn't want it to completely over power the foie....if i was using a country chunky pate and some headcheese...i'd add a lot more pickles and chilies)....


and then finished it off with a healthy dose of fresh cilantro.....




i'm not going to lie. it was pretty great. it was incredibly decadent.....and pretty great.


i tried to eat it relatively slowly but keeping eating it with gluttonous glee. it put me in a lovely mood after the morning meetings and i was able to almost skip into my desk when i was done....ready to tackle the rest of the work day with a smile.
